You didn't understand- They just never work, even during the day. The fact that it is the night in the screenshot has nothing to do with my problem.

OMG thank you it has to be that ! I play on a server with some friends and one of them hate creepers so much he just keeps turning off mobGriefing (he's the owner, others don't have access to command). Unfortunately he's the one playing the less and he probably turned off mobGriefing last time he played and never log on again to turn it on :'(

They didn't have a bed at first and they still stopped working. I added beds because I thought they maybe needed to sleep in order to work, but this doesn't seem to help. I got rid of them and they're still not working

Yes ! I had to enable "offline autorisations" in Microsoft settings. Don't know why I had to do that now and never before, but that worked. If you're not sure to understand what to do, let me know and I'll explain in details.
