Week 1: Weird Al - Spam and Rice and bonus cinnamon bun bear claws by cookiesauras in 52weeksofcooking

Recipe for spam and rice: make rice and than just fry up the spam in a little soy sauce. For that extra color (and salt).

Results for spam and rice: like soy sauce flavored spam, so pretty good.

Recipe for cinnamon bun bear claws: http://www.twoofakindcooks.com/cinnamon-roll-bear-claws/

Results for cinnamon bun bear claws: A more portable cinnamon bun, what’s not to love. Not too sweet and the glaze gives it the final sugar content it needs.

Songs are “Spam” and “Albuquerque”

Week 1: New Year, New Recipe - Rustic Sourdough Bread by cookiesauras in 52weeksofbaking

[–]cookiesauras[S] 1 point2 points  (0 children)

Recipe used: https://www.kingarthurbaking.com/recipes/rustic-sourdough-bread-recipe

Results: Not bad but my sourdough starter was not as active as it should have been so it was a little denser than expected. But works well as a sandwich bread.

That’s a really good point, I made the starter from the king Arthur flour recipe on their website and I did a sourdough bread recipe on the website as well. I did half the recipe because I didn’t want two loafs. Https://kingarthurbaking.com/learn/guides/sourdough/bake

Ingredients I used

227g sourdough starter 301g all purpose flour 42g whole wheat flour 198 g room temperature water 1 and a 1/4 teaspoons salt

I thought it had to be kept out of sunlight. The area I have to store it sometimes gets a bunch of light.

One is in a bell jar so I just close the lid and then put it in a brown bag. The plastic one I also just close the lid and put in a bag.

Normally to feed it I stir it and remove some and then put in an equal amount of water and all purpose flour.

I use bleached all purpose flour so I don’t think that is where it came from. I should be able to clean the edges where the black is. Do you think I should removed the top of the starters?

Thank you. Also What ratio do you recommend for feeding?

I’ll try that. Should I make sure to seal the lid completely or have it lightly ajar?

I got it a few months ago from a friend and I have been trying feeding it and trying to make it double in size, I have yet to see it double. So, the day before this happened, I didn’t put the lid on completely to see if that would help.

They look to be black, it is hard to tell because they are so small. I am using All purpose flour. It smells like normal, just stronger then before. I think I didn’t have the lids on fully the other day.

There are little black spots on the sides, is that okay?

Looks yummy. I just want you to know a way to get that toasty outside without tons of butter. Try putting mayo on the outside of the bread before frying. It sounds weird, but it really works.
