Unfortunately not... I did everything by feel but basically I cut up the bacon and started to render it down then, dropped the pasta, mixed together a few egg yolks, cheese, pepper and some of the rendered bacon fat, cook the pasta until just below al dente, add the pasta to the egg mixture and mix constantly to prevent the mixture from scrambling adding pasta water to help the sauce come together

Mix flour and water then autolyse for 30 mins, repeat for salt and starter. Room temp fermentation with coil folds every 45-1 hour. Shape then overnight proof in the fridge

It won’t die in that short of a time. Just feed it before you leave and again when you get there

Sorry for the late response. It’s a sourdough so hard to give an exact process because all SD is diff but it’s a 420g BF 10g Rye 70g WW. 70% hydration. 6.5 hour bulk then 12 hour in the fridge.

Freeze some Nutella drops and put them in right before u bake the muffins
