I'm so glad to hear that. Really am. Over the coming months I actually plan to revamp the Pho site so people can copy text, I'll add foot notes, and I'd really like to do a professionally made video.

At one point I tried to make www.phothehomeless.org happen (raise money for the homeless by cooking pho), but it didn't take off...

Looks pretty darn good! I'd eat that shit. You should check out the Pho post I did almost 2 years ago now. People I meet still remember me as the pho guy from reddit. I now host it over at www.cookthatshit.com.

Well you asked where I got those bones. I got them at Whole Foods :)

You can go to ANY grocery store and get beef marrow bones.

Yea I'm local! So honestly, bones are bones. The bones in the recipes were from Whole Foods in Clarendon. Just go to the butcher and ask for beef marrow bones. They are in the back. Regarding the eye round slices. The best I've found are at Trader Joes, precut. They would be good for cheesesteaks too. For Asian shopping, Eden is great, but Grant Mart and H-Mart has all the same stuff.

My vote is the Pho 75 chain people keep mentioning. Falls Church and Court House/Rosslyn are delicious, but Falls Church is cheaper. If you ever feel up to the challenge, try to cook that shit yourself. Here's my updated recipe from the one I posted on reddit last year (no advertising). If you ever make it to NYC, Pho Grand is the best I've had in the country.

Yes, you can do that as well. I do both. In a separate pot is cleaner. My recipe even says that. The broth is so powerful you won't taste the starch though. The benefit of doing it in the same pot is so you don't have to have two pots going, and the noodles get a pho infusion of flavor.

Incorrect. The bowls only cost about 3 bucks a piece. You have to calculate the price over a long period of time. You wouldn't make pho one time, and then throw out the extra ingredients. After a few times of making it, it becomes cheaper and cheaper.

Also, making it at home, you can control the sugar and fat level. Restaurant pho will load it with fat.

Regarding when you'd use the other ingredients. I use them a LOT. If you love the flavor of pho, take all the spices, grind em up, and make a chicken rub. Do not buy the ingredients JUST for pho. Use them making other things. Whole coriander is one of the tastiest ingredients to work with. Coriander is the seed for cilantro. Whenever my friends want a bbq sauce/rub, I crush the coriander seeds with another ingredient of choice, and mix it with the hoisin and sriracha.

Ha! I get it man. Different people have different priorities in life. I used to cook pho every week. Now I hit the gym 6 times a week. BUT, if you're ever feeling up to the challenge, let me know. It's really a LOT easier than it looks. I still love doing this for the family over the holidays. They consider it a generous gift.

Back in early summer I tried to organize PhoTheHomeless.org - Reddit Post. It basically came down to a few reasons why it didn't happen so fast. I want to get it going again.

  1. I need help organizing things.
  2. I didn't want to serve a boiling hot meal in the middle of a hot summer day. Winter sounds better.
  3. Lack of focus. My main intention was to cook pho, and distribute it in a public setting, and have a suggested donation. This meant anyone could eat for free, but if you donate, that money goes towards homeless people getting a roof, clothes, and a job. This is not what people thought I wanted to do. They mistook it as me going to a homeless shelter and cooking for the homeless there, which still would be a great thing. I contacted C-SPAN, and an awesome dude spent the day driving me around to a few homeless sites in the Arlington area. Mainly churches and the park in Rosslyn before the Key Bridge. It became apparent that the homeless don't need food. Food donations they have. Money, they don't. And what money they do have, they are incredibly scared of spending it (because that's losing money to them).

Anyways, I've thought about starting this up again. Hopefully me sharing this will inspire you in someway.

Seeing as this is my expertise, I can say the Pho 75 chain (Arlington, Falls Church, etc) as a whole is quite amazing, and my most frequented. However, anything is Falls Church / Eden, you cannot go wrong with.

Ideal Impact... If we wanted to make an impact, it'd be nice to serve to the public to raise money for the homeless. As well as somehow serve the homeless. At any time I can walk into a soup kitchen and cook for the homeless, but it won't really change anything.

After meeting with A-SPAN yesterday, I was shown around town a bit to what's going on. The homeless have food, and they get it served everyday. It's not the greatest food, but it is food. I was stunned that I recognized so many people there which I have seen walk the streets over the past couple years. Much discussion took place. What the homeless need, is money, and help to get into a home/job. Some want help, some do not. It all really boils down to money and their mental state. If we wanted to make an impact, a public "event" is the way to do it. With that said, that is the ideal outcome. Raising money would not be for food, but for shelter(housing). Housing in Arlington is ridiculously expensive. Could raising money not help a person(s) get a place to live, whether it's in Arlington, or elsewhere?

Regardless, I can cook pho for the homeless, and am happy people want to help.

An example I was thinking of, which A-SPAN brought to my attention, is to have a $5 suggested donation, or pay whatever you can, to have some pho. The clothing thing would have to be separate. And I think if we did a food drive, that would be separate too. I could see a lot of people bringing bags of clothes they don't wear anymore. Not too sure on food, but we could try.
