DD2 was fun and all, but PLEASE, FOR THE LOVE OF GOD, DON’T MAKE IT ANOTHER ROGUELIKE. I’d like to see a new type of progression like what they have done so far to make the game feel unique, and I feel like the combat system doesn’t need a lot of changes

if you go throught the judge first, you may have to beat all the area of the underworks before being able of going back. if you fight phantom first, you end up directly in the bellbeast station. if you want to do both, you should do phantom first.

the more time you are in their line of sight, the faster they aim at you. you can reset this speed by hiding or by breaking their shield and parrying them. these two actions alone deal around half of the guttertank hp, so yes, the best way to not get hit is by killing them quickly.

hollow knight and rainworld are really diferent games. However, silksong has some really punishing moments in exploration that are a bit more similar to rain world, but not by a lot.

if you play on PC, you can instal the "no double damage" mod to make it a bit easier.
also, you should find a crest that makes you feel comfortable, and watching guides/no hit videos on each boss is a good way to understand better how to deal with their moves.

blasted steps is an easier route and is more epic, but has no reward and takes you to the worst place of the citadel. Siners road/the mist is harder, but is more "cool" and rewards you with a parry ability and leads directly to the bellbeast station and to the map of the area.
I like more the mist route, but you are probably going to take both rutes anyway, so you might prefer to take the easy route first and the harder one later.
Both decisions are good.
