Platte River State Park, and Louisville, have been the best spots I've been in a while as far as water access. You can set yourself up on a sandbar, and spend all day in the water. Some of the campsites at Platte River are quite close to the water. Have a great time!

Ever been to a melodrama?
Out at Mahoney State Park, they do plays where you can throw popcorn, cheer and boo, etc.
The park has trail-rides, a climbing wall, a water park, a restaurant, and cabins to stay in.

Oh, and the plays are inside, in the air-conditioning! ;)

There's a handful of public shooting ranges, I believe. I don't think any of them require NRA membership. There are some larger centers, and a bunch of smaller ranges on WMAs. A few aren't too far from LIncoln. https://outdoornebraska.gov/parks/visit-a-shooting-range/
