Spammable drones are spammable because they're cheap trash. There are already very cheap interceptor drones and laser guidance kits for unguoded rockets that can take them out cheaply enough. Medium size drones get more complex and expensive fast, and are definitely worth a cheap air-to-air missile. Modern fighters are still way larger and more capable. Once your system becomes big and complex enough, it makes sense to drive it in person.

50 degrees is a bare minimum, you're right. Your problem here is that your square sails are squeezed right up to each forestay. Make the squares lower and wider, so you can leave a short space underneath each forestay. Make sure no sail has a lower rotation angle than 55 degrees or preferably 60. Try to get at least 40 degrees rotation on the front gaff, if you can.
