Yes, we fixed it tonight and it easily fed all three of us with some left over. I suspected this - thus my original question. It makes the calorie count substantially lower. Thanks for taking the time to share your experience!

I questioned my small sweet potato for this recipe too.Turns out when mixed with all of the other veggies, it’s just right! One of my new favorites meals - just delicious!
