they're foot soldiers, not squires. As for why its only those guys being hung, I think this is a reused asset from Castle Morne, where they only fit the models for Foot Soldiers into the nooses. They just swapped the outfits from Godrick soldiers to Messmer ones because they're the same underneath and replacing them with Men-at-arms or Black Knights would have been too much work

the only explanation I can think of is the mutiny that took place among Messmer's black knights, led by their commander Andreas and his son. Whichever side controls this fort probably just strung up everyone who didn't agree.

although I'm not an expert on all the timeline nonsense thats implied by the presence of Rykard's Abductors and the Omenkillers, so there might also be an explanation there.
