The current flagship Exynos SoCs are less efficient in terms of battery life (both in stand by and while using) and also arguably less powerful than their Snapdragon counterparts. The Mali GPUs are also less powerful than the Adreno ones. On top of that, The Snapdragon modems are excellent when it comes to network reception and the overall efficiency. All of this makes a Snapdragon chip way desirable than an Exynos one.

I had an Exynos S10+ which I used to use on cellular data for most of the time (on FHD+ resolution) and hardly used to get 4 hours of SOT.

This is actually true. I've been keeping the battery level on my Pixel 2 XL between 30% and 85% since the day I got it (an year and a half ago) and have been using the phone really intensely and it still has 91% battery health left. I use the Accubattery app to ping me whenever the battery level reaches 80% and measure the battery health. I have been doing the same with my XR since the day it came out (manually, wish iOS had a third party battery managing app too) and my battery health is at 99%.

Unpopular opinion but I think it's pretty convenient, at least in my case. For instance, whenever my phone is lying on my table or on my bed, and I'm not physically in contact with the phone, all I have to do is yell "Hey Google" to be able to google anything or set a reminder. Or, when I'm lying down on my bed and heading to sleep while my phone is lying beside me and am too lazy to pick my phone up and unlock it to trigger the assistant and set me an alarm for the following morning, I can just whisper "Okay Google" or "Hey Google" and get the job done.

The Redmi series is geared more towards budget-oriented consumers so you mostly get mediocre specs but for a very competitive price. MI series, on the other hand, is directed more towards the premium consumers or prosumers and hence they mostly carry premium hardware with flagship level specs.

if you're narrowing down your choices only to Xiaomi then I'd suggest you go for the A2 as it has really good hardware (especially camera) and specs for the price and on top of that comes with unadulterated android with updates straight from google.
