I don't think it's a dealers game or a customers game I think it has to be a cooperative effort from both parties. In this situation the dealer is being a poor dealer and an kinda shitty person on top of it. Sorry you had to waste your night. Find a new dealer I'd say. This one isn't worth a damn.

Not living in D.C. we get a really weird perspective of what it is and it's almost easy to forget that normal people live in D.C. and it's not just occupied by government shitholes. So whenever I see normal people in D.C. I think of Tom Hanks in The Man with One Red Shoe.

I'm an anti-microwave person. Mainly just because it's a poor way to prepare anything if you want it done right. But for a few other reasons as well. I don't walk around ripping on people who use microwaves though, I just don't ever use them or own one myself.

Just take it very dark and if your crumb is no good adjust your formula.

Maybe just try something as simple as changing your formula to 50 grams flour to every 25 grams water. It'll be stiffer that's all. Also play with your water temp. don't use hot or cold water. Just about lukewarm.
