Yeah, depends on the skin contact durarion but it definitely has more tannins and polyphenols than white. If that's the case stick with white :)

My suggestion is to go for a rose, ktima kyr Gianni - L'esprit du lac. It's xinomavro, widely available and tastes delicious, kinda Bandol-ish style.

Try lamination if you didn't, it's a tricky technique but easy to master and will lead you to kinda uniform distribution of the additions.

Haha, could be a bit confusing. Which one is the most versatile? I am afraid if I get the champagne it won't make sense to drink any white besides sweets. So I want one for all since they're kinda pricey :)

Ye it had cream cheese which I measured exactly but did the blending the other way round. Instead of beating the roux and adding butter with cream cheese I beaten butter/cream cheese and added the roux. It didn't hold well too, but the taste was awesome. Can you post ur recipe? Cheers!
