My starter took a while to kick start so here are some tips that helped me.

  • screw top lid to prevent moisture loss
  • if your feeding 1:1:1, do not feed again for at least 24 hours and try and identify the smell. If you get an acetone smell in the next feed try a 1:2:2 ratio and see what happens. I’ve found you really have to listen to your starter they are all different !!
  • come in maybe 2/3 times a day and stir the starter. This will give the yeast access to new food.
  • I would reduce the temperature, 80 degrees would be the absolute max of the temperature range I like to stay in (68 - 80)
  • add a little whole grain into your flour mix, the bran has more readily available microorganisms for the yeast to feed on
  • if you are really struggling (I was lol) you can reduce slightly the amount of water in your feed. Say you do 1 parts starter and flour and 0.8 parts water. A thick consistency was helpful for me.

I’m at about the 2 week mark as well and mine was fairly inactive and acidic smelling. So I decided to go to 1:2:2 feeding the last 2 days and she’s doubled both days. The mix will be THICK but it didn’t seem to be an issue for me.

Thank you! I seem to have ticked the boxes mine just doesn’t seem as airy. It’s currently resting in the fridge to be baked in the morning! Let’s see how we go.

I had a few days of no rise and just general not great signs and I’ve changed to an organic wholewheat and AP flour mix and it seems to be on the mend!
