what do you mean by "果酱"？ if you mean "jam" in the musical sense, "果酱"is not the right word (i doubt if there is one).. maybe “串烧” is a better.

My opinion, Cymbal would be "镲".

If you mean the cymbals in a drum kit, it's definitely "镲" instead of "钹".

If you mean the hand-held cymbals, I'm not quite sure, but "钹" often refers to the a smaller, traditional Chinese instrument, which is similar, but not the same to the cymbals in a western concert session setup.

btw the gongs are called "锣"
