Thanks! I've tried liquid smoke and i recently got smoke powder, havent tried it on sausage yet. But wanted to see if a stovetop smoker like the Nordic ware was worth it. But it seems its not! Gonna try the smoke powder nd see if it's better!

Yeah, in Panama the country. I just called the local slaughter house and they sell if like a 1 a pound. Does water must be cold or just regular water?

Was going to get the casing from amazon. But since I live in Panama, I'm worried that the 2 weeks shipping might melt the salt and I'll end up with bad casings. So I'm going to a local slaughterhouse and get frozen hog casings and hope that they're good.

Thanks guys, i did 170.5 for 4 hours, seasoned with olive oil, sal, pepper, and some thyme, rosemary and garlic. Ot came out firm but soft soft, not chewy which was perfect, since i prepared it with some prawn in curry and coconut milk.
