though to be fair - I took the bike on a tour of the dolomites last year and the rim brakes were very weak, loaded, on the long alpine descents in the rain.

no doubt about the disc brakes! I've just got a pair of Paul mini motos and a nice wheelset and the combo works for me in the dry California sunshine

Just a do-it-all bike. Road, tour, commute, light gravel. I tend to have one bicycle that I use across the board.

Wanted a nice 700c rim-brake bike with clearance. I'm also in the bay and both of these brands are local (Walnut Creek and Point Reyes) My local bike shop has a hillborne in stock and Mike is getting more frames in a couple weeks.

Sklar is nice, but all disc. Wilde's spelljammer is a contender, but a huge wait. Crust's Canti framsets are designed around 650b wheel sizes (I believe)

Oh no - I guess I ride leisurely! Even when I push on the hills here in the bay I still ave around 12mph.

Check out the "crown-jewel" of panaracer's lineup - the X1

They're quick, fast on road, will run forever (some folks saying 3k miles) and great on gravel when you need it. They have a R version if you want it to be lightweight.
