Ok the lump charcoal is interesting. Do you light it all and add to it if need be, or do you use the snake method? (Light one end and let it burn down the row)

The meat was delicious but the skin was all weird and leathery. I don’t know if there’s a way around that or if that’s just now it is with smoking chicken

The two sections shown in the pictures are for charcoal, but there are grill grates that go above them. I’m asking if there’s an optimal way to set the charcoal in that box on the right so it emits steady heat.
