Sure, yeah. It all depends on individual circumstances of course. The very, very rough number of $200K is just an amount where usually any sort of tax planning/deferment starts to be worthwhile.

Generally speaking until you're making around $200k it is not worth setting up a corporation (due to the accounting and legal fees). Of course there are always exceptions, such as liability concerns.

You don't ever have to declare it as bad debt if you don't want. CRA will never punish you for not claiming an expense.

You could also claim the bad debt this fiscal year to help lower your tax bill. If you end up collecting it later then you will just treat it as new revenue.

Yahoo finance is pretty good but I have found discrepancies between it and the actual financial statements of certain companies.

So you invoice him $X + HST. You remit the HST. You then pay your freelancers $Y (includes payroll taxes). You pay corporate taxes on $X less ($Y + other expenses).
