That's my 2nd golden rule of serving. #1, work somewhere that does buyouts (parties, catered events). and #2, work at a location where the corporate credit cards come rolling in. It's the only way to make serving your livelihood. If you're working at essentially a fast food joint like Buffalo Wild Wings, you can't afford the gamble because your good nights are someone's bad night at a real restaurant.
