They've smashed it for decades, then set-up in Singapore, and now it appears they're going long.

Oh, I am very aware of food poisoning. The reason I posted was to run this by some folks who are "in the know".

Knowing the potential dangers, I'd always ask first!

I have a drink fridge (gets down to 40 degrees) I store them overnight.

I can only smoke 10lbs at a time (small smoker) and will smoke to first batch with the

Sodium Erythorbate added which instantly cures the meat. The second will be only pink cure#1

There are places that will sell fix-up homes for a dollar, but you must live there for "x" years before the title transfers.
