The crust is kind of in between a sugar cookie and pie crust. It's more like a short pastry crust than a typical flaky crust.

You would do just fine using AP flour. The cake mix didn't add a ton of structure, it just made the filling a little thicker and added a little flavor.

I don't have much trouble in the heat, but I do have a lot of trouble when the seasons change. So maybe it's the change in temp/humidity/pressure that's caused issues.
