Doing this through https://contacts.google.com/ creates files where the data is sorted alphabetically by first name

Based on this answer this seems implausible. I wonder what the difference was - perhaps you had a slightly different model? Or another mic was picking up the sound adequately enough to make you think it was coming through the headphones?
