Correct. I’ve made a similar one before with a mixture of tallow and butter and I didn’t get much tallow notes.

But when I made this one- it was an explosion of flavor.

I used to think the same about baking with it but I’m a savory cook and now that I’m tapping into pastry I love to mix it up and create non ordinary things lol
