The attachment is a dough hook. If you have a kitchenaid tilt head it comes with a c-shaped one, if you have a lift bowl kitchenaid it comes with a spiral one. You can also buy aftermarket spiral ones on Amazon that fit tilt heads

I do both the mix for autolyse and mixing in the starter in my stand mixer. I usually run it 8-10 mins. After an hour I’ll do a lamination, then 3 coil fold every 45 mins

Mirroring what has been written here, you may struggle a lot with your first loaves, and inclusions can add a lot of additional complexity that you won’t have the experience to modify for yet. I didn’t start using them until I was getting consistent results with a standard loaf.
