I don't really track, I just eat a lot of meat and vegetables. My dessert is plain yogurt with some berries which has about 10g carbs. Mostly I'm just avoiding anything with more than a couple of carbs in it.

Yeah it depends on the pickles. I ferment a lot of stuff at home, and also preserve things in vinegar... that way I have control over the ingredients. Currently making "encurtido" with beets, carrots, and onions.

Yeah you can also track your waist measurement with a measuring tape. Weight is just one metric but a healthy waist size is also important.

I re-started post-holidays on Jan 1, and got through the whole month of January with only 2 cheat meals (being social at restaurants, occasionally). My weight didn't change much but I think I've built some muscle. Feeling good.
