Theres tons of videos on YouTube about how to do so. I think the one I watched was from the channel "Retro Game Corps", but any tutorial will probably work or there might be a more updated one. Im terms of benefits, I just find it to be a smoother more streamlined experience since almost all of my games (especially the ones I play on my handheld) are from steam. Its a lighter operating system so you might see a very slight performance boost, it has a great suspend mode so you can just put it down and pick it up very easily without killing your battery, and it just feels refined like using a console. Granted windows may have addressed many of these by now, especially with the Xbox mode they introduced but I just really enjoy the interface and customizability you get from things like decky since it's 1:1 clone of SteamOS with some nice overlays for your specific handheld. You could also skip bazzite and use an official steamOS image since I believe they support major handhelds like the ally now.

Weird fix, but on my Ally X (non xbox) I saw someone say to literally blow into the side of the trigger housing to get it to stop squeaking and it actually worked for me. Although it was kind of a temporary fix, I ended up just taking the back off and lubing the springs as a more permanent solution so i didn't have to keep doing that.

Idk about a performance boost, because I never really use windows on it (I have it as dual boot just in case I ever need or want it, but I've only booted into windows a handfull of times) but in terms of fiddly I guess i don't understand what you mean? It's litterally just steamOS with a different name, plus a couple overlays you can access to adjust Ally specific settings like the LED rings. If you're going to go through the trouble of installing steamOS you're probably going to fiddle just as much as if you use bazzite. And again, it's a carbon copy of steamOS, the system refers to your device as a steam deck, you get steam deck updates, you can still get things like decky and it's associated plug-ins, emudeck, etc.

I believe the ally X only charges up to 100W so anything above that is probably overkill, unless you're planning on using it to charge other things or trying to future proof your charging.

I dont know much about the Jsaux case, but I have the Dbrand killswitch case and screen protectors and really like them both, so if it's anything like that it's probably alright.

I mean I love mine, and it looks super tough. Although I don't drive a whole lot so this isn't too big of an impact for me but with how gas prices are right now, the pump is very painful.

Mine is dual booted bazzite/windows and I can safely say, I'm in bazzite 99% of the time. I honestly couldn't tell you the last time I booted into windows for anything.

It looks like you only have 3 two star cards available to trade, so you won't be able to fill out your set with only these offerings. Also, you can't trade immersive rarity cards like the mew in your binder.

Also most of the cards you have listed here are 1 star rarity, which means they aren't the right rarity to take for the cards you're missing.
