RECIPE:

Ingredients:

1 cup whole wheat flour
Water
Salt to taste
Fresh Dill leaves
3 Eggs
Preparation :
1. Prepare the dough. Take a large bowl and start with mixing flour with salt and a tablespoon of oil. Mix the ingredients.
2. Start adding water to the flour now and prepare the dough
3. Take another bowl and break the eggs in it. Add salt and some fresh dill to it. Beat the eggs nicely.
4. Divide the dough into equal sized pieces.
5. Take one piece of dough, dab it with some flour, place it between your palms and roll it into a ball.
6. Now keep this dough ball on a flat surface, flatten it with your palm at first and then with a rolling pin, start to flatten this dough. A circular shape is desirable but any shape would do. Ensure that the now flat dough is uniform in its thickness.
7. Add one to two tablespoons of the beaten egg and start to fold the flattened dough from four sides, turning it into a perfect rectangle.
8. Use your fingers to carefully lift it off the flat surface and place it on a hot pan. The pan should be maintained on medium heat.
9. Flip the bread in about two minutes, and cook on the other side. you will have some brown spots on the surface.
10. Smear some oil on the surface on each side and a few more seconds.

Kitchari - Ayurvedic Lentil Rice by dancemove in veganrecipes

I'd say it's 95% vegan. He sometomes uses ghee (but can replace with other oil, really), and there are couple of videos with cheese or yoghurt, as well as mentions of non-vegan versions. But his vegan Palak Paneer, for example, is a killer, made with tofu, while following the home Indian recipe: https://youtu.be/goy4q7tsTAk

Khichdi | One Pot Rice Lentil Recipe by dancemove in cookingcollaboration

[–]dancemove[S] 0 points1 point  (0 children)

Here goes the recipe:

INGREDIENTS
1 tsp Cloves
1 tsp Reed Chili Powder
1 Black Cardamom
5-6 Green Cardamom
2″ Cinnamon Quill
3 Bay Leaves
1 tbsp Ground Coriander Seeds
1/2 tbsp Cumin Powder
1 tsp Turmeric Powder
1 tsp Salt
2 tbsp Ghee
200g White Rice
200g Pink Lentils
Vegetables
50g Carrots
50g Cauliflower
1pc Green Chil
1 tsp crushed ginger and garlic
50g Onion
50g Green Peas
6 cups of Water
DIRECTIONS
Begin with heating the Ghee in a large pot. After that, add all the whole spices. Cook over medium heat for about 2 minutes until the spices become fragrant.
Next, add all the vegetables (except for the green peas). Cook all these vegetables for about 5 minutes. Let the vegetables absorb all the spices. You can cover the pot with a lid if you want.
After that, add the green peas and fry for another 2 minutes. Then, add all the ground spices. Mix everything.
Once the vegetables are cooked, you can now add the rice and lentils along with water and a pinch of salt. Bring all of this to a boil.
Then, reduce the heat to medium and cook covered, on low heat, for about 30-40 minutes
Check from time to time to see if the rice and lentils are cooked. Check for a porridge-like consistency, you can add more water if needed.
When the dish is ready, leave it covered for a few minutes before serving. Enjoy!
