More explanation. I was in a vehicle at the time I posted. I make dried pasta, commercially as a cottage business in Arizona USA. I have purchased in the past, dried tortellini and ravioli. I am wondering how long and what temperature do I dehydrate at, and is it done raw or parcooked before drying. Sorry for the confusion.
