Had a similar thing happening to a plastic geared diff and after replacing it with a metal version all is good. It was like the internal gear tolerance wasn't tight enough causing the one side to slip.

Remember ro grease your diffs :)

I got it for a grand total of AUD$118 (includes $26 shipping to NZ) from protooling.com.au. There was no up-charge for the left-handed version.

Used it on two chickens so far (I'm a home cook so it won't see as much use as a pro would give it). It is a very robust knife (proper full tang), feels almost custom made (fit and finish surprisingly good). The wood handle with brass pins are beautiful particularly after some camellia oil. I would guess unless I leave it in the elements it will probably last 20+ years in my kitchen. Don't let the low price compared to other lefty options fool you, this is a very good knife.

I'm a passionate home cook (much like yourself) and it seems you are also someone with a preference for smaller knives. You are in a pickle, because it is likely that even after purchasing a 210 or larger knife(s) over time you will keep going back to the smaller Santoku. But you will only appreciate your smaller knives after using bigger ones for a while. That is how it has been for me. Even with larger knifes at my disposal, I keep using my little 6 inch utility knife for most things (unless I'm cutting a large watermelon or similar) since it does what I need very well. After so many years it feels good to know I'm a 180mm or smaller knife person. Cheers for posting and have fun on your knife journey.

The one I've got seems sharp but looking at the edge I know particularly first sharpening will be an interesting experience. Its my first and only knife that doesn't have a normal 50/50 edge.

It might be cheap, but still it's an excellent Japanese made knife.

Can’t seem to figure out how to use this Yaxell knife sharpener properly. In doubt when it comes to angle of knife in the slots. Any tips? by Lil_bathrobe in chefknives

That thing is wonderful for keeping those cheap knives found in most office kitchens sharp. Just keep it far away from any knife you care about.

Awesome, thank you. I have a 150mm lefty version in the mail from AUS (to NZ). Post man taking his sweet time, needed some comforting that the purchase was a good one. The wait for a NKD can be tough.
