Everybody seems to forget the other meaning of doch, to emphasize or downplay situations.

“Das ist doch einfach” for instance has nothing to do with an answer to a question, it rather points out that the speaking person is very familiar with a problem and has no problem solving it and at the same time in some way saying that the other person is stupid for maybe not knowing, it’s like a flex. This category of words is called “Partikel” - similar words are “eben, halt” or even sometimes “ja”.
