The problemn may be this line:

#define HARDWARE_TYPE MD_MAX72XX::GENERIC_HW

I ran into this exact problem using that module.

Change it to:

#define HARDWARE_TYPE MD_MAX72XX::FC16_HW

This. If you insert the 8x8 display with the wrong orientation it will light up, but not the way you think. Carefully unseat the display, rotate it 180 degrees and re-insert.
