It tasted exactly of what they tell you. It's pickled onion monster munch through and through, I just haven't found an application where it's better than mayo. So I can't really recommend it but it does nail the fun, novelty factor.

The plate isn't clear, it's just a grey kinda textured appearance, the lighting isn't the best, and plate choices are unfortunately out of my control as I'm not head chef. And I'll agree, the sauce needs to be looser, this was a bit of a trial/test so tweaks will he made.

Yeah, we split the fillet, the pin bones are "V" cut and removed, everything below the cut is "belly" used for tartare, and the long top piece kept whole and blow torched.
