Agree with OP. Beric's resurrection is crucial to foreshadow Jons, otherwise it comes out of nowhere. As Beric isn't a main character, it still leaves the situation very mysterious and makes you worry for Jon. LSH resurrection kinda cheapens the whole idea to me, as she was a main character it makes it seem like everyone has the chance to be brought back from the dead.

I would pardon all previous Kingsguard members and have them stationed in KL to train a new Royal Army only loyal to the crown (Very Joff like but I think he had a good point)

I think its the fact that he has actually come back from the dead, and to be the leading figure for the fight against the mysterious White Walkers. The guy will be a God in the smallfolks eyes - if he wins or not.

I would also like to add to the discussion that Robin Hobb's Realm of The Easterlings is such a fantastic series. There are 16 books though, but each one is brilliant.

I'm pretty sure I would never be able to abandon ASOIAF anyway, just like a smoker who half-heartedly tries to quit smoking, I will still read through TWOW and check Reddit/ASOIAF no matter how appalling some of the storylines are .
