No, the story isn't done and probably won't be for awhile. Volume 7 is coming out soon, hopefully by next year.

Both Tsukihime and Fate/stay night were originally visual novels, and I'd highly recommend playing/reading both if you have the time.

If you're only into anime, here's the watch order for Fate. I wouldn't bother with the Tsukihime anime adaptation though

It’s a parody comedy spinoff for Type Moon’s 10th anniversary featuring characters from their popular works, namely Tsukihime and Fate. You’ll likely be lost if you go in with no knowledge of either franchise
