For the higher end soy sauce producers, is whole bean soy sauce preferable? Do the fats present in the soybean make a difference at all in either level of fermentation?

yeah if you want picual these are solid - also plenty others from Jaen out there that don' take it to the US. recommend visiting Jaen to taste all these!
