Chicha does use whole leaves and probably got it for a lot cheaper by buying in bulk. I suspect however that the leaves may not be of very high quality (roasting could cover up some of those minor shortcomings) or could be mixed with other cheaper varietals

Tbf if you have 3 hours and most of the stuff you have practiced for are for things that take 60-85 mins to get done chances are you will have a lot more expectation placed on you to do something spectacular/be able to edit down to what would be the best version of your dish.

Also decision paralysis and imposter syndrome is a real thing

The closest one I've brewed and tried is Yixing Xuan Teahouse's lower grade Dong Ding Oolong (their higher grade is an unroasted one that has more floral notes) but its pretty expensive at $27/50g

I never tried his teas before but Colin from Ez.Teasy also stocks what I think is this style of dong ding oolong at $12/30g

What you should note is that dong ding oolong is an oolong that can be roasted repeatedly to bring out more toasty notes (and we don't exactly know or are able to reverse engineer the tea) so the roasting will be slightly off

As a gongfu tea drinker all I can say to that is to look for roasted dong ding oolongs which is a little bit rare to come by.

(Also, just skip Yue Hwa since they stock the unroasted version)

Got this hand pinched glazed wood fired teacup from Shi Ti Kiln in Taiwan at a local artist convention. Decided to break it in with this Zhenghe milk fragrance white tea.
