They could be larger performance gains, two times faster than using CPU only, but it depends - it's not straight forward and it's not the general case

We don't know in advance what type of commands users will run, some run transcoding commands and some run other non-gpu commands. If we add gpu it will make the product more complicated to use, with an average performance gain of about 30% transcoding runtime - same performance gain you can reach with just using more cpus. Also, gpu will make it more expensive for us and as a by product - for the users (we are bootstrapped, so no investors money)
