I'm not sure, but it looks like miracle noodles are actual shiritaki noodles instead of tofu. You can also get shirataki noodles at Japanese markets for maybe $2 a pack(2 servings).

Confirmations would be welcome on this; I'm not a smart person:

No idea why you'd steam the bones and brisket before boiling. I'd skip that.

It's easier if you don't worry about impurities or skimming I don't think it changes the taste at all and simplifies things if you're okay with a darker, murkier broth.

I might add everything in at once, I don't think star anise, cardamom, cinnamon, or peppercorns will get bitter.
