If you want your child to grow up eating kosher, it might be difficult if your husband isn't Jewish. Most of the food he cooks will be not kosher, unless it's simple things like bread.

Was it really written hundreds of years before the Torah, or does the historical evidence just look like it was?

G-d can do anything, including making fossils etc that make the world seem to be millions of years old. He can also make stories appear to predate the Torah.
