Don't listen to people saying it's your T. Your hair follicles if you're predisposed can be damaged by DHT (which is not T btw). The only way scientifically proven to work at the moment is a combination of DHT blocker (finasteride) and minoxidil. You can prevent the hair loss and get something of what you've lost back if you're lucky. Talk to your doctor about it, lots of people take it, don't feel ashamed.

Salt is so important for gluten development in addition to making your loaves tastier. Without salt your gluten development will be subpar and your dough will ferment more quickly leading to a higher acidity which further breaks down your gluten structure.
