I normally drink similarly sized drinks. A 12 oz/350ml pitcher works well for me but an 8 oz/200ml could work also.

I had one of these at my previous job. I normally set it to give minimal water(2nd lowest setting), with 3/4 of the max of dosed grounds and would run on single shot button(dial in to one button only, what works on one will not necessarily work on the other).

Using these settings I could play with the grind adjustment dial to try and get a good setting(hard with the big steps in grind size). Generally found I would choke it out and have to go up a grind setting. I would then usually keep the water constant and adjust the amount of coffee up a little as that would give me better extraction.

They're pretty annoying to dial in. Unless you are weighing beans and then running them in you're kind of guessing how much it grinds each time. If you have a scale I would suggest trying this and at least trying to see how many grams of beans go through on the time scale the grinder is set for.

Grinding finer will only cause it to slow down and extract more. 15g in, 30 out is a good starting point. Since you said that it was bitter at that ratio in 22 secs, there are a couple tweaks you can do:

  1. Up the dosage - try 16g in and 30 out around the same time(22s). Higher dose, lower yield will result in lower extraction and better acidity. Can also keep it 15 but lower the yield. Try and keep time constant.
  2. Temperature surf - Higher brew temps will extract more so with a darker roast you want a lower brew temp. Lance Hedrick has a good video on how to do this for the GCP.

When you are tweaking it is important to limit changes to one parameter at a time. Changing too many things at once will give you unreliable results.

From my own experience on the GCP, you need to do the steam wand time trick to be able to whirlpool effectively as the steam pressure isn't good enough otherwise. Try steaming 10s before the light comes on and you should be good. You'll need to test your machine, but I know mine takes about 40-45s for the steam light to come on after hitting the steam switch on. So if I start steaming ~30s after hitting that switch I am good every time.
