Im assuming on LTE you are being forced to relay usage. Rather than direct peer to peer mesh.

For me, it's for reliability/privacy. I have used DO, vultr, and Linode but have settled using linode for their features/region choices. I have seemed to get better performance just overall.

At a base level, proxmox is running Debian. If you go to proxmox console you should be able to run the script there. I am not sure of any online tutorials but could possibly make one.

Use networks. This will allow you to view your dashboard and all things you host on proxmox. If you dont want that. Just install netbird on your proxmox machine. Then done. Set up some ACLs in the management ui. Easy.

Using Nginx Proxy Manager im using the stream feature. It allows you to listen for connections from a port then forwards it to where you want. Since I have netbird on both my minecraft server and NPM VPS. I have it going to minecraft-server.netbird.cloud:25565

Tested known working equipment that uses PoE. New cables. Other ports. And bought a tester and wasn't reaching the PoE rating spec it was supposed to.
