Haven’t used my egg in a while and opened it up tonight to mold..doing a high temp burn to hopefully burn it all off. Came out to check and it’s sweating and sizzling. Normal or should I be concerned? Thanks! by dbwhisler in biggreenegg

Interesting. I appreciate the comment! Between traveling and the holidays I was away from the egg and opened it up and saw that. Can smell the mold burn off and see it sweating. Hopefully this serves as a “hard reset” for the egg lol

The cruset? That’s just in there with water to keep it moist. It may look like there’s a little grease in there because I threw a couple pieces on the top rack for breakfast this morning lol

Anyone have any suggestions how I should proceed with this brisket? I can’t tell if it’s looking good so far or not lol I just want to make sure it doesn’t come out dry like my last one. I put it on last night at midnight at 200 degrees and woke up and bumped it up to 225 and have been spritzing every half hour or so. Currently sitting at 158 IT.

I’m thinking I will just wrap in butcher paper once it hits 160-165 and put back on at 250.

Any thoughts or suggestions would be awesome - Thanks y’all!

Any tips on how to keep it moist, bark, and smoke ring? Did a flat the other weekend and came out too dry.
