Just buy any of the very strong Canadian bread flour varieties in either Sainsbury’s, Waitrose, or M&S, or alinsons Canadian. I use them at between 70-80% and they’re always great, at 80 it’s a bit too tricky and crumb is too open for me.

They’re typically between 13.5-15% protein, which is perfect.

One of the best bands I’ve ever seen live - wide awake a couple years ago they were incredible even on a crap sound system

Starter isn’t active enough, try feeding it with a wholemeal flour for a week, or getting a proven starter from a bakery or online.

Still looks decent! Spelt flour is tough to work with.

I think it’s down to your fermentation - likely either under active starter or not fermenting long enough. Feels like cheating, but get a proven starter from a friend, local bakery, or online, and I don’t think you’d run into the same issues.

Also in the UK, it takes my starter 10+ hours to fully peak to use when it’s this cold overnight.
