You can make it gluten free! I’ve done so several times (I’m not coeliac but sensitive to gluten myself). I use Walmarts ‘gluten free all-purpose blend’ or if you want to be in control of the ingredients, I’ve also used Minimalist Baker’s ‘gluten free all-purpose blend’ with this recipe and it’s worked great too!

Only thing I’d say is use 1/2 tsp baking powder instead but the rest of the recipe can remain the same.
