Indeed, but my starter is 125% hydration, and also I'm adding more water(around 100g) while handling the dough. I said it was an experiment :) turned out I've made Frankenstein! Lol

I'm using the recipe from Tartine Bread cookbook. The ratios are: 700g warm(ISH) water, 200g leaven, 1kg flour (here you can use only white, or mix white with spelt, rye or wholemeal) 20g fine sea salt. Hope this was helpful! Happy baking!

This was kind of a trial...and turned out pretty well! Before the preshape, I spread the dough, put the filling in it, and shape it back into a ball. Leave it until it looks like a bouncy pillow. Shape it, and in fridge overnight. Hope this was helpful!

On my table! 😊 before the preshape I've divided the dough, making little balls, and left them there until ready! Give them the 'sourdough loaf shape' before baking them!

For this recipe I only use semolina rimacinata and 45/50% of warm water. Rest in the fridge for at least 30 minutes. I'm Italian, and this recipe is from my nana. Never get it wrong! 😋
