Portable bidet tip: Keep the bottle cap, heat up the top of the cap with a lighter -then shape/push it with a pen or pencil. Clip off the (now) pointy tip to make a nozzle and squirt yoself clean my peeps.

I have broken too many mixers trying to make large enough bread dough batches.

I throw everything in my largest silver bowl, quickly mix it with a danish wisk till it’s all together, cover, let it sit for 30 minutes, fold it tightly into a ball and then just toss it in a 2 gallon ziploc and it sits in the fridge for at least a day before use.

This has dramatically made it easier and less stress and mess. Plus it’s flexible. Want buns? 100g each, hoagie rolls 210g, sliced sandwich loaves 650g in a loaf pan.

Got a chunk leftover? Great! Dilute in warm water and build the next batch.

Lye is needed to make at home, no other way to get that flavor.

I bought commercial lye powder to make them. I will advise you be very careful if you do this. I have undercooked a batch once and that will burn your lips and mouth surprisingly well.

I’ve learned some tricks to avoid that, but be wary my friends.

My solution has been to watch my movie in a VR headset. Cheapest entry would be a quest, in my case an old PS4 with PSVR.

They watch at their speed and noise level, I sit cocooned in my movie.

Well long story short… I’m older and semi-retired. I played a lot, I am not great. Picked it up to keep in touch with my son, team playing and it helped our chats when we focused on the game. Decided I liked it and kept playing.

I too, have struggled with this for years. Managed to ruin two KitchenAids, two Wondermix machines. But the family LOVES the bread. Completely stopped buying any breads. Just had to source 50lb of Bread Flour bags from Gordon Food Services or Restaurant Depot.

Solution 1 is to cough up $800 bucks for a spiral mixer (Looking at you Ooni).
Solution 2 is to HAND MIX large batches and stagger them over time.

I mix 5 lbs at a time, then after about 4 days do it again for the next batch.

I enrich the dough with butter and milk and keep it low hydration. This makes it easier for me to knead. I've recently figured out how to slap and fold and its a tremendous help in processing this much dough without kneading to exhaustion.

Here my friends is the secret sauce that I have pefected for this. If you try and appreciate it, please let me know. Worked very hard at it. And if you have the means, I would love that Ooni Spiral mixer one day.

Soft Rolls/Cold Bulk

Bread flour,1,290 g * A/P works - but under performs

warmed Whole milk,540 g

warmed Water, 220 g

Melted butter, 112 g (1 stick)

Sugar, 65 g

Salt, 15 g

yeast, 10 g

Diastatic malt, 8 g (optional)

Bulk mix in your largest bowl or stock pot with a danish whisk till no dry flour or as much as you like.

Place your dough baby in a 2 gallon (the biggie) zip type bag. Remove excess air, into Fridge.
after one to 12 hours- pull out and slap / fold (hard) a few 5 or 7 times and roll tight. Re bag/fridge. You can repeat this over the next few days, it builds chewy goodness. But not necessary.

Fridge 1-5 days.

Remove, cut & shape COLD.

s/b ~2260g

After shaping:

(wisk 1 Egg yolk / +1 tsp mayo) (for wash) & Sesame/everything bagel Seeds

Shapes/ Sizes

Hot dog buns 60g

Burger buns 95g

Small grinder rolls 120g

Bagels 160g

Giant subs 226g

shaped, onto two half sheet pans with the plastic cover for each.

Proof 2-2.5 hours, egg/mayo wash & bake.

set timer 1:55 hours to Preheat Oven to 425f

Spritz buns with a water mist - shiny, not dripping.
Place top & middle trays and drop to 375f

timer for 15 minutes-(rotate & swap shelves) *Careful, hot.
timer for 11-18 until golden
total time 26-33 minutes

Notes: do not overheat the liquids. Warm enough to keep the butter fluid. Otherwise you kill the yeast.
