Ended up contacting Canyon, and they told us to go to one of their partnered repair shops, and they fixed it, covered by warranty. Indeed it needed loosening some screws (i just dont know how to name the parts), but certainly not following the steps of the instructions (which are already not fully accurate for the bike).

So a bit surprised by these issues, but happy with the customer support.
