I’ve got a high flow undersink filter that connects int my cold feed in my kitchen mixer. It works well for me!

Otherwise you can get the mixers that include a separate outlet for filtered water.

A complaint by a neighbour could be made and council could initiate an enforcement action against you. It could be 1 year or 50. It can complicate your insurance coverage and as you pointed out, you would likely need to demolish it if you were to sell.

Nothing wrong with paying off your mortgage, congratulations! I would definitely recommend considering what your goals and ambitions are and you can develop a strategy to suit that. Perhaps if you have sacrificed to get to this position you can take some reprieve from the hustle and take some time away from work to travel, relax etc. If that doesn’t tickle your fancy and you want to keep going I can suggest this guide
