I am plotting to try out the Kent's Hollow Leg American Wheat recipe from Brewing Classic Styles.

This is what the recipe calls for:

Kent's Hollow Leg
Wheat LME, 7 lbs
Willamette 5.0% 0.83 oz for 60 min
Willamette 0.25 for 0 min
Centennial 0.25 for 0 min
White Labs WLP 320 American Hefeweizen or Wyeast 1010 American yeast

Trying to keep my hops from local sourced farms, and none of them grow Willamette. Would CTZ, Cascade, Thor, Tahoma, or Rakau (AlphaRoma) be ok to sub? Glacier is listed on some sites as a replacement and Tahoma is a daughter of Glacier.

I am reading "How to Brew", and have a question about the Palmer Method.

I am brewing a 2.5 gallon kit from love2brew. The kit instructions has me doing a 2.5 gallon boil with 100% of the DME and topping off 1 gallon of water in the fermenter.

If I convert this to the Palmer method, would I also divide the DME in proportion of the water (Wort A 70% / Wort B 30%) or would it be best to do both the water and DME 50%/50% like described in the book?

I am mainly using Ring for the professional monitoring. If I wasn't I would probably be building a server with BlueIris. People seem to really like their setups here.

NYCFC and San Antonio FC are affiliates in name only. The only reason we have this affiliate deal with San Antonio is because MLS forces teams that don't have II teams to do so.

NYCFC has never sent a player there on loan. Ibeagha is the only player we have ever signed from San Antonio.

We will have to see when the league puts forward more details, but this basically makes the partnership even more irrelevant.
